The ancient Roman Empire expanded its territory and built countless roads across Europe. Among them, "Via Claudia Augusta" was an important corridor that ran through northern Italy, crossed the Alps, and reached what is now southern Germany. Soldiers and merchants, along with wine, olive oil, and spices, traveled along this route, carrying the culture of southern Europe north. Cavit is not a single winery but a large-scale production organization formed by multiple cooperative wineries and thousands of grape growers spread across Trentino–Alto Adige. This reflects the region's traditional agricultural structure, collecting grapes grown in diverse terrains such as highlands, valleys, and riverbanks to maintain consistent quality. Because cooperatives can source grapes from a wide area, the system offers the advantage of producing a uniform style even when the climate shifts. As grapes are gathered that preserve the growers' long-standing practices and the area's topographic traits, the freshness and vivid acidity of the region's white wines remain intact.
Thanks to this structure, Cavit established itself in the late 1970s as a leading producer to first introduce Pinot Grigio to the U.S. market. At the time, Italian white wines consumed in the United States were known primarily from the Soave area in northern Italy, but Cavit and wineries based in Trentino–Alto Adige began to shift consumer tastes by highlighting a lighter, fresher style of Pinot Grigio. Since then, Pinot Grigio has grown into a popular white wine that is easy to choose for everyday occasions, and Cavit Collection Pinot Grigio is now considered the best-selling Italian white wine in the United States.
Although the Pinot Grigio variety originated in France, Trentino–Alto Adige is often credited with shaping the style recognized worldwide. The region's alpine climate maximizes Pinot Grigio's strengths. Rather than excessive concentration, it shows bright acidity, refined fruit, and a light structure, and is generally regarded as an easy-drinking daily white wine. Another advantage is its natural compatibility with a wide range of foods.
Cavit Collection Pinot Grigio is made from 100% Pinot Grigio. Selected grapes are fermented at low temperatures in advanced temperature-controlled tanks to preserve fruit aromas and freshness as much as possible. With no oak aging, it is vinified in stainless steel tanks, revealing the variety's delicate, clean structure as is.
Pale straw in color, it first opens with citrus notes like lemon and lime, followed by fresh pear and green apple fruit and a subtle layer of delicate white flowers. It is dry and light, but the acidity is clearly alive, flowing briskly across the palate. The finish is not long, yet it is refreshing and clean. It is good as an aperitif and pairs well with cream-sauce pasta, risotto, veal, chicken, and fresh seafood. It won the top honor in the Old World white wine category at the 2025 Liquor Awards.
