Shirataki Seven Junmai Daiginjo, from the Shirataki Brewery in Niigata Prefecture, Japan, is a premium sake produced in an annual limited quantity of 1,000 bottles. The snowfall in Niigata Prefecture during winter melts in spring to become natural spring water, undergoing natural filtration as it passes through coal layers. This natural environment is noted as the secret to producing the light and elegant sake of the Shirataki Brewery.
The term Junmai means that it is made only from rice and koji without adding brewing alcohol. A lower polishing ratio is considered a mark of higher quality sake, and Junmai Daiginjo has a polishing ratio of 50% or lower. Shirataki Seven Junmai Daiginjo received high praise for its clean finish and lingering aftertaste behind its splendid aroma, earning it recognition as the Best of 2025 in the sake institutional sector at the Korea Wine & Spirits Awards.
The Korea Wine & Spirits Awards is the nation’s representative liquor tasting event, now in its 12th year. ChosunBiz has held the event annually since 2014 with the goal of “discovering and widely promoting good domestic liquor and supporting the formation of a healthy drinking culture.”
This year’s event featured 236 companies showcasing a total of 1,008 brands. It is the largest-scale tasting event for general liquor in South Korea. Among these, 431 brands received the grand award. The 25 brands that received the highest scores for each type of liquor among the awardees were selected as the “Best of Best 2025.”
