Woowa Brothers, the operator of Baedal Minjok, held the 2024 Baemin Restaurant Conference at COEX in Gangnam on the 17th, outlining next year's restaurant industry trends such as "hyper-personalization," "slow aging," and "tailored consumption."
The Baemin Restaurant Conference is a free event that participants such as current restaurateurs and aspiring entrepreneurs can join. It started as an online event in 2020 and was held offline this year.
Chefs who appeared on the Netflix cooking competition show "The Chef Show" introduced their management strategies at the conference.
Chef Im Tae-hoon, known as "Chef Iron Bag," introduced his journey of successfully operating a restaurant he opened in a semi-basement after learning Chinese cuisine on his own, emphasizing that "positivity and perseverance are important."
Chef Jeong Ji-seon from T&Mimi shared his know-how on side menu recipes that boost sales. Additionally, Song Seong-man, a director at Fritz Coffee, explained the story of how the Fritz brand has survived for 10 years and the secrets of coffee menu composition.
Woowa Brothers proposed tailored strategies that break down menu combinations or provide customers with multiple choices in accordance with the hyper-personalization trend.
They also suggested menus featuring low-sodium, low-calorie, and decaffeinated options to align with the slow aging trend, while sharing pricing strategies in response to consumption polarization.
The event showcased Baemin serving robots and the table order service "Baemin Order."
