He said calmly, "I usually started work at 9 a.m. and finished at 1 a.m. Since I worked six days a week, that means I worked 96 hours a week. There was no break time. The intensity of the labor was unbelievable," drawing surprise.
Later Kwon Seong-jun said, "Because I couldn't communicate at all and the local dialect was strong, I really took a lot of swearing back then. Communication is important in the kitchen, and when you can't communicate, it's frustrating," expressing regret.
He added, "Every minute and second was urgent, and I couldn't understand. Then someone else had to do the work. So I really took a lot of swearing. If there are dozens of swear words in Italy, I probably heard each of them at least ten times."
But he said he believes he is who he is now because of that time. Kwon Seong-jun said, "I learned the attitude, passion and mindset as a chef," and said he hopes to relearn his initial determination.
Meanwhile, the production staff asked what score they would give the youngest Kwon Seong-jun at the time. Kwon Seong-jun said, "I was a 50-point youngest. No matter how well you do, if communication doesn't work you can't score above 50," then awarded the score, saying, "Among halves, it's the top score," showing his characteristic self-esteem and eliciting laughter.
