"Baeksajang3" Paik Jong-won and the members took a step closer to their annual sales goal of 1 billion won.
On the 17th broadcast of tvN "Baeksajang3", it showed Paik Jong-won on the sixth day of business with bibimbap as the main menu.
On the morning of the sixth day of business, Paik Jong-won, Lee Jang-woo, Yoon Si-yoon, John Park and Kwon Yuri gathered in front of the monitor to check the sales from the fifth day of business. On the fifth day, kimchi jjim was a huge hit, and toward the end of business takeout orders poured in, raising expectations. As they expected, the fifth-day sales were 1,326 euros (about 2.15 million won). With only 4,963 euros left to reach the annual sales goal of 1 billion won, John Park suggested a segmented target, saying, "We have to sell 2.5 million won a day," and Paik Jong-won encouraged them, saying, "We have lunch today and tomorrow and the day after tomorrow left, so let's do our best."
Paik Jong-won emphasized a fast turnover and said that on the sixth day they would operate a "one-bowl shop" rather than a "one-plate shop." The menu Paik Jong-won revealed was none other than bibimbap, and he aimed to sell 100 servings of bibimbap. Having bought ingredients in bulk at the mart, Paik Jong-won and the members started preparing them, and they tried to capture local tastes with various menus such as chicken bibimbap and yukhoe bibimbap.
With customers arriving as soon as they opened, Paik Jong-won paid close attention even to the samples that would catch the eyes of passing customers and pushed the business forward. The kitchen was run by Paik Jong-won and Lee Jang-woo, and Lee Jang-woo kept retracing the flow of making bibimbap and eventually made a mistake. He tried briefly to hide it so it would not be discovered, but it was eventually found out by Paik Jong-won, who scolded him and he lost trust. But Lee Jang-woo quickly adapted to the kitchen and restored trust by serving bibimbap in excellent condition.
As lunch approached, more customers came and takeout customers also arrived, making the members' hands and feet busier. There were mishaps such as confusing takeout order numbers, and Paik Jong-won firmly warned them, but customers raved about the taste of the bibimbap. Thanks to the fast turnover amid the praise, ingredients ran out and they had to make things urgently, but the business continued smoothly.
Unlike the average of 23–24 bowls sold on weekday afternoons, that day they sold 42 bowls and experienced a sharp rise in sales. In the evening they planned a strategy to boost sales by adding side menus and having servers actively promote them, and Yoon Si-yoon immediately began preparing evening dessert menus. Yoon Si-yoon, who was the baker king in Baker King Kim Tak-gu, enrolled in a baking academy for the first time in 15 years and practiced diligently for a month, mastering a variety of menus from red bean buns to pizza buns and heralding the return of the "baker king."
Returning as the "baker king" after 16 years, Yoon Si-yoon chose "crungji," made by flattening croissant dough. Because crungji has already established itself as a national snack in Korea, presenting it in France, the country of bread and the birthplace of the croissant, Yoon Si-yoon put even more care into it, but making crungji was not easy. Receiving advice from Paik Jong-won when he returned from the mart and falling into deep thought, Yoon Si-yoon boldly adjusted his practice recipe and finally succeeded in making the crungji he wanted.
