On the 17th episode of tvN "Baeksajang 3", Paik Jong-won was depicted on the sixth day of business with bibimbap as the main menu.
After checking sales from the fifth day of business, Paik Jong-won thought fast turnover was the answer to achieve annual sales of 1 billion won during the remaining period. Paik Jong-won wanted to increase turnover by serving one bowl instead of one plate or one course, and chose bibimbap as the menu for fast turnover.
John Park scouted nearby restaurants to learn the prices of menus similar to bibimbap, and Paik Jong-won, along with Lee Jang-woo, went shopping at a market before starting ingredient prep. They sequentially made menus aimed at local tastes, from chicken bibimbap to raw beef bibimbap.
The kitchen was run by Paik Jong-won and Lee Jang-woo, who set out to make bibimbap. A workflow was created where staff moved among three stages—stage 1 for main items like raw beef and chicken, stage 2 for vegetables, and so on—but Lee Jang-woo failed to adapt and moved against the flow, causing confusion.
In the end, Lee Jang-woo produced a result that did not match the sample. He hurriedly tried to hide his mistake, but Paik Jong-won's sharp eye could not be fooled. Paik Jong-won scolded Lee Jang-woo and showed his disappointment, and Lee Jang-woo momentarily lost trust but regained it by preparing bibimbap well.
