"Baeksajang" culinary researcher Paik Jong-won took on a renewed attempt at makgeolli steamed bread, while Yoon Si-yoon's "bread king" challenge met an unexpected reaction.
On the 10th episode of Baeksajang season 3, the fourth day of business was depicted.
First, that day Paik Jong-won introduced a new makgeolli steamed bread menu but encountered an unexpected variable. He said, "What if it doesn't turn out well?" with worry as he steamed the bread, but the dough failed to cook properly. Paik Jong-won immediately said, "I'll try again" and took on a renewed attempt, but the result was the same. In the end, the makgeolli steamed bread ended in final failure.
The cause was overfermentation. Paik Jong-won explained the dough condition, saying, "The fermentation went wrong," and said the problem was missing the fermentation golden time due to weather changes. The disappointment was greater because the menu had succeeded in every practice.
Fortunately, sales were not bad. By total sales, they achieved more than 50% of the annual sales target of 1 billion won and continued a record performance.
In response, Paik Jong-won revised the dinner menu strategy. He centered the menu on Korean dishes such as kimchi jjim and rolled omelet, and Yoon Si-yoon also said, "It's good for drinking," agreeing. Paik Jong-won also declared he would avenge the makgeolli steamed bread. He said, "I'll beat the baguette," hinting at another attempt, and upon hearing this Yoon Si-yoon mentioned his past appearance in the drama Bread, Love and Dreams, evoking laughter.
The next day in business Paik Jong-won challenged making the steamed bread again. After checking the dough, he said, "Yes, this is the real dough," expressing anticipation, and this time succeeded in making an appetizing makgeolli steamed bread. When customers drawn by the smell of bread flocked in, Paik Jong-won said, "Let's bake one more loaf. Intentionally lure them with the smell," and set a strategy, and orders continued, reversing the atmosphere.
Meanwhile, the teaser shown at the end of the broadcast included a scene of Yoon Si-yoon invoking "Bread, Love and Dreams" and embarking on developing a new bread menu. He presented a "krungji," a variation of the French croissant.
But the reactions of local French people differed from expectations. Some customers strongly objected, saying, "You ruined the croissant," and "You've changed the croissant's taste." In response, Yoon Si-yoon appeared flustered, saying, "Where did it go wrong? This is a big problem." Interest is growing in whether Yoon Si-yoon, who invoked the "bread king" title, can win over local tastes and restore his reputation.<
