'Baeksajang' culinary researcher Paik Jong-won attempted to make makgeolli steamed bread but ultimately tasted failure. However, he quickly succeeded in drawing customers with a service strategy.
On the 10th, the tvN variety show Baeksajang season 3 aired a segment showing the introduction of a makgeolli steamed bread menu on the fourth day of business.
That day Paik Jong-won, saying "What if it doesn't come out well?" worriedly began steaming the steamed bread. However, the finished bread was undercooked. Lee Jang-woo, who tasted it as a test, also reacted in alarm, saying "This is dough?" Paik Jong-won said "I'll try again" and immediately attempted a retry, but the result was the same. In the end, the makgeolli steamed bread was never properly completed and ended in failure.
The cause was a fermentation problem. Paik Jong-won mentioned the overfermented dough, saying "Fermentation caused problems and it ultimately didn't work. It's not undercooked; the fermentation went wrong." No matter how much they steamed it, the texture remained soggy.
The unexpected variable was the weather. Temperature changes threw off the fermentation timing, causing it to pass the golden window and become overfermented. Because the menu had succeeded every time during practice, the disappointment was greater. In the end Paik Jong-won quickly wrapped up the situation, saying "Today is a bad-weather day. We have to say the bread can't be made." Feeling sorry for the customers, he also proposed a service: "Let's give coffee to the front tables and not charge for the dessert."
Afterward he prepared additional dishes, trimming peppers and making pepper pancakes as part of the service strategy. Despite the unexpected menu failure, he succeeded in keeping customers' attention, and customers slowly began to return to the restaurant.
