Singer and actor Yun Hyun-suk, who is battling diabetes, has revealed a healthy tteokbokki recipe.
On Feb. 18, a video titled "Can diabetics enjoy tteokbokki eating show? Yun Hyun-suk's challenge after 2 years" was posted on Yun Hyun-suk's YouTube channel 'Jam and No Jam.'
In the released video, Yun Hyun-suk said, "Today, I prepared the national snack tteokbokki. Honestly, it was what I wanted to eat the most after being diagnosed with diabetes. I really like rabokki, but I can't eat ramen. So, I looked for rice cakes made with brown rice and konjac."
She continued, "There is sugar in the rice cake, but instead, it contains stevia. It's very good for people on a diet and for children as well. Instead of rabokki, I will use pasta. Compared to other options, it raises blood sugar much slower. So today, I will replace ramen with pasta."
Before starting the cooking, she checked her blood sugar, which was 149 after taking insulin. After completing the rabokki with various vegetables, Yun Hyun-suk had a mukbang with the staff. She exclaimed, "It really feels like rice cake. It's completely rice cake," and confessed, "I haven't eaten tteokbokki in years. Considering I haven't been able to eat it since before my diagnosis, it's been quite a while."
She marveled, "It has been over 2 years, almost 3 years. Every time I came to Korea from the United States, I would eat it once. Thinking about that, it's truly been a long time since I last had it. Now, I can buy pasta noodles and make this rice cake dish at home."
After enjoying grilled pork belly and tofu kimchi for the second round, Yun Hyun-suk said, "I had tteokbokki today for the first time in 3 years. I ate to my heart's content. I will check my blood sugar after the meal."
Surprisingly, her post-meal blood sugar was 151, showing little difference from her pre-meal level. Yun Hyun-suk noted, "Honestly, I was worried. With fat and gochujang containing sugars, I thought it would spike. But I am managing my blood sugar while eating like this. You should eat like me. It's good for your body and prevents blood sugar spikes."
She added, "I am amazed at myself. If I had eaten regular meals, my blood sugar would have hit 300. I think I can buy pasta noodles and make them at home. You all can easily make it at home as well, by using allulose instead of sugar and rice cakes made with brown rice and konjac."
Earlier, Yun Hyun-suk confessed that she is battling diabetes. At that time, she revealed, "I lost up to 38 kg and couldn't stand. The doctor said it was so serious that my heart muscle had also deteriorated, risking cardiac arrest," shocking many.
