Not only in Asia but also as one of the oldest fermented condiments that have accompanied ancient civilizations worldwide, fish sauce has captivated Romans, described as the pinnacle of gastronomy and the taste of heaven. It intertwines the secrets of cultural exchange between the East and the West that flow through the entirety of Asian food culture. Webtoon artist and broadcaster Kim Poong embarks on a culinary journey highlighting fish sauce.
This journey is not merely an introduction to fish sauce as a simple condiment; it is the first documentary that approaches this natural seasoning, a heritage of nature and humanity, within the context of history and culture. "Flavor Log: Fish Sauce," which consists of a total of four episodes, will be released sequentially and is filmed in five countries: Italy, the United Kingdom, China, Vietnam, and Korea, introducing diverse stories that transcend East and West.
In the first episode, it will explore the history of Western fish sauce by tracking "garum," which captivated gastronomes during ancient Rome, and the existing Italian "colatura di alici." The second episode will shine a light on the traditions preserved by fish sauce in East Asia, including Korea and China, and its future. The third episode will investigate the Vietnamese "nuoc mam," which holds a unique position in the global market and the secrets of its success, while the fourth episode concludes the culinary journey with chef Kim Poong, who, along with his close friend Chef Sam Kim, presents special dishes utilizing fish sauces from different countries.
