Chef An Seong-jae shared his philosophy on restaurant operations.
On the 5th, a video titled "Napoli Mafia PICK favorite Spanish dining restaurant" was posted on the YouTube channel "Chef An Seong-jae."
The released video featured An Seong-jae meeting Napoli Mafia (Chef Kwon Seong-jae), the winner of Netflix's 'Chef's Table' Season 1.
While having a meal and chatting, Chef Kwon said, "As I heard, Chef An Seong-jae is rumored to scold staff every time he goes to ('Mosoo')." Chef An acknowledged this by saying, "It's not a false rumor. I'm glad the guests didn't hear any swearing."
Chef An noted, "However, there is one thing I definitely tell the staff: it's better to be scolded by me" and emphasized, "I can say this with confidence. I'm not attacking the staff personally, nor swearing at them; I'm discussing the situation. This might be unpleasant for those who hear it, and they might say, 'Still, you shouldn't swear,' but I didn't swear at anyone intentionally."
He continued, "It's better for those who witnessed me scolding them than for wrong dishes to be served when they eat, which I dislike even more." He added, "I'm really sorry to the guests and have thought about lowering my voice a bit while explaining, but they also came to learn from me. So the best way I can help them is by sharing what I know, making decisions based on each situation, and explaining it."
He explained, "So sometimes we all stop and instruct 'do it this way.' Even if they say, 'Guests are waiting,' I say, 'Just ask them to wait a moment.' Things need to be organized for delicious food to come out again." He added, "It's a constant juggling act between ingredient quality and time. I try to think about that and do my role as best as I can."
